<p>This Pine Gin and Tonic recipe may seem a bit untraditional. Simple syrup and ice cubes made from pine needles? Who wants to drink a tree? Trust us &#8211; it&#8217;s surprisingly tasty (not to mention GORGEOUS!), with an earthy flavor that brings winter and Christmas to your taste buds.</p>

<p>This cocktail involves a couple extra steps that you might want to prep the day before you actually want to make your drinks. You&#8217;ll need at least 2-3 hours to make your ice cubes and simple syrup.</p>



<h2 class="wp-block-heading">How to Make Pine Ice Spheres and Pine Simple Syrup</h2>



<p>The first step in creating this beautiful drink is to make the pine ice spheres. Start with a <a href="https://shrsl.com/2oa7r" rel="sponsored nofollow">set of sphere ice molds</a>. Place a small twig from a pine tree into each, cover with water, and let them freeze up.</p>



<p>Next, make your pine simple syrup. Simple syrup is a key ingredient used as a sweetener in many cocktail recipes. In its most basic form, it is made by combining equal parts sugar and hot water. Since sugar does not dissolve well in alcohol or in cold beverages, simple syrup is used to ensure that sweetness is uniformly mixed into a cocktail.&nbsp;</p>



<p>To make this pine simple syrup, you first need to gather a couple boughs from a pine tree. We used about this much:</p>

<p>Remove the needles from the branches and rinse them well. </p>



<ul class="wp-block-list"><li>Combine one cup sugar and one cup of water in a saucepan over medium-high heat.&nbsp;</li><li>Heat the mixture to a gentle simmer for 5 minutes to fully dissolve the sugar, stirring a few times. You want to see steam coming from the surface and a few bubbles. Do not let the water come to a vigorous boil or you’ll start boiling off water, which will affect your water to sugar ratio.&nbsp;</li><li>Lower your heat to medium-low. Add the pine needles to the pan and simmer gently for 15 minutes. Stir several times during the heating process.&nbsp;</li><li>Remove from the heat and cool for 5 to 10 minutes.</li><li>Strain out the pine needles and pour the syrup into a clean, air-tight jar. </li></ul>



<p>A <a href="https://amzn.to/2OokWUa" rel="sponsored nofollow">mason jar</a> is ideal for your homemade simple syrup, and it’s a good idea to sterilize your jar in boiling water before storing your syrup to guard against any bacterial growth.&nbsp;Store it in your refrigerator and it will stay good for about 2 weeks. If you want it to last longer, mix in a half-ounce of vodka to act as a preservative. This will extend your syrup&#8217;s life to about 4-6 weeks.</p>

<h2 class="wp-block-heading">Making a Pine Gin and Tonic</h2>



<p>When your ice cubes and syrup are ready, it&#8217;s time to make the drink. Find a <a href="https://amzn.to/3aeDMpr" rel="sponsored nofollow">gorgeous glass that holds 8-10 ounces</a>. Place a pine ice sphere in the glass. (Don&#8217;t forget to take a photo because it&#8217;s just so pretty!)</p>



<p>Pour 2 ounces of your favorite gin, a half-ounce of pine simple syrup, and an ounce of fresh-squeezed lime juice into a cocktail shaker with just one ice cube and give it a quick shake. You don&#8217;t want to water this drink down (since you&#8217;ll also be adding tonic water), but you want it to get mixed and cold before you pour it into the glass so the pine ice sphere doesn&#8217;t melt too quickly! </p>



<p>Strain into your glass, top with tonic water and enjoy! </p>

<p>I had some beets and ginger root that were threatening to go bad so I decided to use them both in some cocktails. I juiced the beets and made honey <a href="https://spillingtequil.wpengine.com/how-to-store-simple-syrup-ultimate-guide/">simple syrup with the ginger.</a> Since I’m working with such healthy ingredients I wanted to make sure I wasn’t adding any unnecessary processed sugars to sweeten my drinks. Ginger honey syrup for the win!</p>

<h2 class="wp-block-heading">Getting to the Root of It</h2>



<p>Both of these colorful root vegetables have lists a mile long of their incredible health benefits, ranging from possible cancer prevention to improved digestion.&nbsp;</p>



<p>Beets are full of vitamins and antioxidants and are known to help lower cholesterol and blood pressure, increase energy and stamina and improve liver function, and boost your immune system. Ginger is a known digestive aid, infection fighter, pain reliever and nausea reliever.&nbsp;</p>



<p>Both have been shown in studies to contain cancer fighting properties, improve heart disease risk, and even help brain function and reduce the risk of Alzheimer’s disease.&nbsp;</p>

<h2 class="wp-block-heading">Spicy Dirt?</h2>



<p>Ok, so we all know these things are good for us, but we’re making cocktails here &#8211; not diet smoothies right? LOL. Ginger is a pretty common ingredient in cocktails so it’s not too much of a stretch. And I would probably put ginger in almost every drink &#8211; I LOVE IT.&nbsp; I opted to use mine by making a homemade ginger honey simple syrup, which gives me a great natural sweetener and spice at the same time!&nbsp;</p>



<p>Beets seem to be a bit more of a love it or hate it sorta thing. My husband insists that they just taste like dirt, and while I do admit that they have a kind of earthy vibe, there’s something about it that I just cannot get enough of. </p>



<p>I’ve only been turned onto beet juice recently at a local (pre-covid) smoothie bar and have been hooked ever since. I could drink it every day (and have been recently)! Give it a nice kick with the ginger and oh my goodness, so good.&nbsp;</p>

<h2 class="wp-block-heading">Classics with a Dirt-y Twist</h2>



<p>Since I wanted to make sure these wonderful, vitamin-filled veggies didn’t go to waste, I thought I’d try to turn some classic cocktails into beet juice cocktails. I went with three staples: the Gin and Tonic; Margarita; and Moscow Mule. The mule was definitely my favorite of the three.&nbsp;</p>



<p>Here’s how to make these three rooty classics!&nbsp;</p>



<p>Start with a ginger honey syrup:</p>



<ul class="wp-block-list"><li>2/3 c chopped, fresh ginger</li><li>1 1/2 c water</li><li>4 TB honey</li></ul>



<p>Combine in a pan, bring to a boil and then let it simmer for 40 minutes or to desired consistency. <p>Seltzer is a an absolute staple in our house. There are some days we even have it at breakfast.  I could drink a cold Coconut Lacroix all day, every day. What do we do with all the seltzer we buy every week? We make skinny seltzer cocktails of course!</p>



<p>It&#8217;s easy (and cheaper!) to make your own hard seltzer. <h2 class="wp-block-heading">#1. Blueberry Lemon Vodka Seltzer</h2>

<p>Mix six ounces of blueberry seltzer, two ounces of vodka, two or three lemon slices and a handful of blueberries.</p>

<p>The unexpected choice of bourbon in this cherry seltzer cocktail will make you wonder why you don&#8217;t mix bourbon in more drinks!  You&#8217;ll probably want to play with the amount of bourbon you&#8217;re adding. Some like it strong, and some like just a hint of bourbon flavor.</p>



<p>For this one, mix six ounces of cherry seltzer, one ounce of bourbon and 1.5 ounces of lime juice. Garnish with a cherry and lime wedge. </p>

<p>The beach is one of my favorite places and this tastes just like vacation! It&#8217;s the combination of the coconut and pineapple that makes this one a family favorite for sure. But it&#8217;s not just for summer, my brother in law requests this even at Christmas!</p>



<p>Mix six ounces of coconut seltzer, two ounces of coconut rum, one ounce of cranberry juice and one ounce of pineapple juice. </p>



<h2 class="wp-block-heading">#4. Strawberry Vodka Seltzer</h2>

<p>Mix six ounces of strawberry seltzer, two ounces of vodka, three lemon slices and a handful of diced strawberries (optional). </p>



<p>Just slice the lemon as pictured and add them in the vodka seltzer. Sometimes when I have fresh strawberries on hand I will chop and add them is as well. Refreshing and so easy!</p>



<p>If you find the vodka a little strong, just be sure to give them lemons a little squeeze.</p>



<h2 class="wp-block-heading">#5. Grapefruit and Gin</h2>

<p>This gin and juice recipe is a newer addition to my recipe box, but it will definitely be sticking around. I absolutely love these flavor with my gin.  Just mix six ounces of grapefruit seltzer, two ounces of gin, two ounces of grapefruit juice, and one ounce lime juice. </p>

<p>This is definitely a crowd favorite.  We usually make a double batch and put them in big mason jars &#8211; check out my post on these <a href="https://spillingtequil.wpengine.com/mason-jar-skinny-margaritas/">Skinny Mason Jar Margaritas</a>. </p>



<p>Mix six ounces of orange seltzer, two ounces of tequila, one ounce of lime juice, and one Stevia packet. You can also change it up and use different flavor seltzers. Some of our favorites are strawberry, blueberry, and mango.</p>



<h2 class="wp-block-heading">#7. Coconut Lime Vodka Seltzer</h2>

<p>I saved the best for last! My personal favorite of the bunch is the Coconut Lime Vodka Seltzer. It is super quick and easy to make with only three ingredients: six ounces of coconut seltzer, two ounces of vodka, and a few slices of lime &#8211; be sure to give them a little squeeze to express the juice and oils from the peel. </p>

<p>You <em>could</em> drink the same layered, sweet slushies you often find on July 4th. Or you could try something a little different like a red, white, and blue gin and tonic! I&#8217;ve got four July 4th cocktails simple enough to serve to a few guests or just to mix up for yourself.</p>

<p>Next week is Independence Day here in the US and while our celebrations may look a little different this year (thanks pandemic), one thing probably remains the same&#8230; you&#8217;ll want a nice cocktail.</p>



<h2 class="wp-block-heading">July 4th Cocktails WITHOUT Blue Curacao</h2>



<p>There are tons of recipes online for red, white, and blue layered slushy drinks. These generally involve creating three different batches of slushies: one with strawberries, one with lemonade, and one with blue curacao. </p>



<p>You make them ahead of time and store them in three separate bags in your freezer. Before serving, let them thaw a bit and then layer them in a glass. They look lovely and taste sweet. </p>



<p>I don&#8217;t know about you, but to me that sounds like a lot of work and risk. What if they didn&#8217;t thaw properly? What if I didn&#8217;t have enough for my guests? </p>



<p>Also? Not really a fan of Blue Curacao.</p>



<p>I wanted something simpler. So I set out to create some cocktails that are festive, easy, and a little different. Here&#8217;s what I came up with:</p>

<h2 class="wp-block-heading">What goes with Red White and Berry Smirnoff Vodka?</h2>



<p>If you&#8217;ve browsed the liquor store in early summer, you&#8217;ve seen Smirnoff&#8217;s Red White &amp; Berry Vodka featured on an end cap. Yes, it tastes just like the label looks: like the classic Bomb Pop (aka Firecracker).</p>

<h3 class="wp-block-heading">Independence Lemonade</h3>



<p>The easiest way to use this vodka is in lemonade! So my first recipe was a simple vodka lemonade. Mix two ounces of Smirnoff into your favorite sparkling lemonade.</p>



<p>This recipe is fantastic because it&#8217;s so flexible. Instead of sparkling lemonade, you could use regular lemonade, a low-cal version, a homemade lemonade with the sugar of your choice, club soda, or lemon seltzer.</p>

<h3 class="wp-block-heading">Patriotic Moscow Mule</h3>



<p>This is my own take on a Moscow Mule using lemon juice and Luxardo maraschino liqueur to complement the Red, White and Berry vodka. </p>

<p>First, make the blue sugar by adding two drops of blue food coloring to two heaping tablespoons of white sugar in a Ziploc bag. Mash it around with your fingers and shake the bag until the coloring is evenly distributed.</p>



<p>Dump the sugar onto a plate or a wide bowl. Rub a piece of lemon around the edge of your glass, then roll it in the sugar.</p>



<p>In a <a href="https://amzn.to/2VmdRUZ" rel="sponsored nofollow">cocktail shaker</a> with ice, pour 2 ounces of Smirnoff, 1/2 ounce of Luxardo, and 1 ounce of lemon juice. Shake and strain into a glass over ice. Top with ginger beer. I like <a href="https://amzn.to/3dyuN0J" rel="sponsored nofollow">Q Mixers Ginger Beer</a> because it&#8217;s natural and not too sweet.</p>



<p><em>Please ignore the ice in my photo! I tried to freeze cherries in my <a href="https://amzn.to/31gXf4B" rel="sponsored nofollow">ice ball tray</a>&#8230; but they just look like eyeballs. (Or something worse!)</em></p>



<h3 class="wp-block-heading">Firecracker Hard Lemonade</h3>



<p>This is for all the fans of Mike&#8217;s Hard Lemonade. It used to be one of my absolute favorites, though I&#8217;m slowly growing out of overly-sweet, malt beverages. My 21-year-old son loved this one though! </p>

<p>For this super-simple cocktail, just pour a chilled Mike&#8217;s Hard Lemonade into a highball or collins glass and add 2 ounces of Smirnoff&#8217;s Red, White &amp; Berry vodka. The vodka cuts the malt taste of the Mike&#8217;s and gives your drink a boost of alcohol (since the Mike&#8217;s has barely any!).</p>



<p>Float a Bomb Pop in there for extra presentation points!</p>



<h2 class="wp-block-heading">Red, White and Blue Gin and Tonic</h2>



<p>And now we get to the pièce de résistance! The layered, red, white and blue gin and tonic!</p>

<p>It was Naomi that originally found this recipe on Instagram. The first time I made it, I used plain tonic water. It was just &#8220;ok.&#8221; I like a little more sweetness in my G&amp;T. </p>



<p>On my next try I used <a href="https://amzn.to/2YwDOTK" rel="sponsored nofollow">Fever Tree Lemon Tonic Water</a> and OMG. It is delicious! </p>



<p>For this impressive-looking drink, you simply need to pour a half-ounce (or one ounce if you like it sweeter) of <a href="https://amzn.to/2VjmSOu" rel="sponsored nofollow">Grenadine</a> in the bottom of a tall glass. Then fill the glass with crushed ice all the way to the top and pour in about 5 ounces of tonic water. The amount of tonic will depend on your glass size. Just leave an inch or so at the top for the blue gin!</p>



<p>Measure two ounces of Empress 1908 Gin into a jigger or large shot glass. Using a bar spoon, slowly pour the gin over the back of the spoon so it spreads across the top of your tonic water. </p>



<p>This 4th of July-themed gin and tonic is easy to make and your guests will love it! Give it a nice stir before drinking to mix up the flavors and it will settle into a nice bright pinkish-red color. </p>

<p>Gin and juice! After you try it, you are going to want to have the ingredients around for this gin and grapefruit juice cocktail all the time.&nbsp; It is super easy to make with only 4 ingredients and no fuss! Just add them to a glass and stir. Seriously, less than 2 minutes a drink!</p>

<p>I created this drink one day after my sister called to say she was coming over. I had a new bottle of gin and a new bottle of Simply Grapefruit Juice in the fridge. It was super quick to put together, and it’s fun and beautiful!&nbsp; How can you say no to fun and beautiful!&nbsp; They are requirements on the checklist for exceptional host status!</p>



<h2 class="wp-block-heading">Gin and Juice</h2>



<p>I grabbed my new bottle of gin and I mixed it with juice!&nbsp; That just screams Snoop Dogg to me.&nbsp; But, lo and behold, I guess he knows what he is talking about. It’s fantastic!&nbsp; Fresh, naturally sweet, and refreshing.</p>



<p>Fun fact: I had never tried gin until very recently.&nbsp; I know, I know… “What!”&nbsp; Sadly it’s true, I have always been a vodka girl.&nbsp; Mostly because I was just familiar with vodka, but also because I thought gin was for old ladies. Who knew it was so amazing?&nbsp;</p>



<p>Wait a minute, maybe I am an old lady?&nbsp; Either way, I love it!</p>

<h2 class="wp-block-heading">Grapefruit and Limes</h2>



<p>Grapefruit has been a favorite of mine for as long as I can remember. There is usually at least one in my fridge at all times. I like to take my time and peel them and get every last juicy pod out of them, then sit with a big bowl as dessert while I watch tv.&nbsp; Heaven.&nbsp; Putting the juice in a cocktail is new to me, but it’s just as delicious. &nbsp;</p>



<p>Limes, limes, limes.&nbsp; I put limes in everything!&nbsp; Sometimes they work and sometimes I’m like, “What was I thinking?” In this drink though they totally work! </p>



<p>Fresh lime juice is always my preferred method, but bottled is easier.&nbsp; It really doesn&#8217;t matter how you add your limes, just make sure you add them.</p>

<h2 class="wp-block-heading">Health Benefits</h2>



<p>I know sometimes its hard to rationalize alcohol with being healthy, especially when you add the words Snoop Dogg in a post about it.&nbsp; Hear me out!&nbsp; Many, many years ago pharmacists were known to mix tonics and elixirs with herbs, flowers and fruits. Is it that out of the question to say that a naturally sweetened grapefruit juice and gin has some heath benefits?&nbsp;</p>



<p>Grapefruit juice is packed with vitamins.&nbsp; It is very high in vitamin C which is known to protect your cells from bacteria and viruses. In this year, 2020, I am looking for all the immune system help I can get! If that help comes from a gin and grapefruit juice cocktail, I am open to it.</p>

<h2 class="wp-block-heading">Old School Dinner Parties</h2>



<p>So a few years ago my husband and I decided with two other couples to start a biweekly dinner party. Just an old fashioned dinner, drinks and board game sorta night. And not just the occasional thing, a REGULAR night with friends that we could all count on and look forward to. It’s kinda something I think our parents’ generation did and somehow in this crazy busy life we’ve lost sight of.&nbsp;</p>

<p>If you don’t have something like this going I highly recommend it! Some epically good times were had on those late nights. We’d eat, drink, talk, laugh and most nights include a game like <a href="https://amzn.to/2ZXkhgd" rel="sponsored nofollow">Apples to Apples</a> (or <a href="https://amzn.to/2ZZScor" rel="sponsored nofollow">something similar</a> ;). </p>



<p>Our hosts moved away this past year and I miss those nights so much! Good news is when we visit them we get to do it multiple nights in a row.&nbsp;</p>



<p>We would all collaborate on dinner and pretty much always decided that it was Taco (whatever day of the week) because… TACOS. We’d raid our refrigerators and bring whatever we had on hand. </p>



<p>Our hostess usually made the meat (supplied from a local farm share, yay!), another couple brought all the condiments and I usually showed up early to make a big old batch of guacamole using my favorite <a href="https://amzn.to/2zSLDcH" rel="sponsored nofollow">avocado tool</a> for us all to devour while we cooked everything else. And now I’m craving guacamole…</p>

<p>While I was making said guacamole, it was my friend Bill’s job to make sure I had a drink in my hand (or at least close by while I was chopping onions, lol). Sometimes it was a craft beer that one of us had brought home from a trip (VT beers being a common favorite) or something one of our local craft breweries had just put out. Every once in a while I’d make some margaritas or a pitcher of sangria but for the most part it was always beer.&nbsp;</p>



<p>Then one magical evening he asked if I wanted a gin and tonic. I was hesitant to betray my “beer girl, lover of all the IPA’s” status, but the limes and the guac and the tacos… It seemed to make sense. So that, my friends, is history. I was hooked. A nice big G&amp;T with all the limes and pulp was officially my new favorite.&nbsp;</p>

<p>So I know you’re just dying to know how exactly to make this life changing beverage right? Good news. SUPER simple, minimal ingredients. All the yum.&nbsp;</p>



<h2 class="wp-block-heading">ALL. THE. LIMES.</h2>



<p>To make my Gin and Tonic with ALLLL the Limes, you’ll need a large glass of ice, a lime, (and ya know, a knife a cutting board), juicing method of choice, your favorite gin (my go-to is Bombay Sapphire), and tonic water. I love <a href="https://amzn.to/3dnBIdK" rel="sponsored nofollow">Q mixers</a> or <a href="https://amzn.to/2MnhuoJ" rel="sponsored nofollow">Fever Tree</a>.&nbsp;</p>

<p>Start by juicing half of your lime and add to your glass of ice. Cut the other half of the lime into wedges, squeeze the juice of three of them into your glass and throw the wedges in. </p>



<p>If you’re using a hearty glass, scrape a wedge or two on the edge to get some pulpy goodness. Give it a stir and then pour tonic water over. Garnish with your last lime wedge and enjoy!&nbsp;</p>

<p>I can’t wait for you all to try this Rose Gin and Tonic! It’s a beautiful, refreshing cocktail that I came up with using some <a href="https://shrsl.com/2iqx5" rel="sponsored nofollow">rose syrup</a> from a local coffee shop.  A perfect spring and summer drink to serve at your next brunch or just to sip out in the sunshine.</p>

<h2 class="wp-block-heading">Mixing Drinks with Local Ingredients</h2>



<p>I get so excited when I learn of a new local source for something we can use at home. For at least the past 10 years, my husband and I have tried to get as much as we can from our local farmers, markets and shops. As a small business owner myself, it’s so important to me to support my local community, and it’s always a good thing to know where our food comes from. I’m fortunate to live out in the farm country of New Jersey (yes, that’s actually a thing!, haha) so it is easier for us than others for sure.&nbsp;</p>



<p>A few miles east of us, the cute little town of High Bridge is home to <a href="https://www.scoutscoffeebar.com">Scout’s Coffee Bar and Mercantile</a>. It’s a sweet spot loved by the locals that also happens to serve coffee from a roaster just across the river from me, <a href="https://homesteadcoffee.com">Homestead Coffee Roasters</a>. A local shop that supports another local business? Win win!&nbsp;</p>

<p>Anyway…My friend shared a post from Scout’s that they’d made some homemade Rose syrup and I knew immediately that I had to have it for some cocktails! Their syrup is made in house and has a very simple ingredient list. Rose, water and sugar. No artificial flavors or preservatives, just how I like it!</p>



<h2 class="wp-block-heading">Dreaming of Sunday Brunch</h2>



<p>Gin and tonic has been my favorite go-to cocktail for a while now. I usually just have it with a whole lot of of limes but lately I’ve been trying to find ways to change it up and see how it pairs with different flavors. It’s a refreshing drink that I love sipping outside in the sunshine so it seemed like something light and floral would be a perfect match.&nbsp;</p>

<p>To make this lovely cocktail, start by gathering your ingredients and supplies. Rose syrup, your favorite gin and some <a href="https://amzn.to/2LRR1iP" rel="sponsored nofollow">tonic water</a>. You’ll also need lemons and the tools to juice them, as well as some crushed ice and a <a href="https://amzn.to/2LQn1DM" rel="sponsored nofollow">coupe glass</a>. (I’m currently obsessed with these sweet little glasses,&nbsp; and will be working on more recipes to pour into them!)</p>

<p>Begin by slicing and juicing a lemon, and make sure you get all the good stuff out of it! Add a spoon full of crushed ice to your glass, pour in the rose syrup, lemon juice and gin and then finish with your tonic water. I garnished mine with a slice of lemon and a sprig of fresh mint from the little herb garden I have on my deck.&nbsp;</p>
